A lot of kitchen utensils look the same but are actually used for very different purposes. For example, knives may look the same but with varying sizes and a slightly different design but they are actually used for specialized purposes that are suited for their designs.
For instance, a butcher does not use a cheese knife in order to chop up meat parts which also have bones. The knife is just not designed for the purpose and could not even cut a bit f the meat. For that same reason, filleting knives can only be used in order to fillet or cut a piece of the boneless portions of meat and fish.
Even filleting knives come in varied designs, still depending on where they will be used. Knives used to fillet meat might be a little sharper than a knife used to fillet a fish. This is why it is very important to take this into consideration before trying to purchase one.
Filleting knives may also come in sets, depending on the manufacturers. Doing so, you will already be able to take possession of different types of knives that could be used to fillet meat or fish and not have to worry about lacking kitchen utensils again.
